Christmas Meal Recipe:

Appetizer: Stuffed Mushrooms

Ingredients:

  • 20 large white mushrooms
  • 1/4 cup olive oil
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Steps:

  1. Preheat oven to 375°F (190°C). Remove mushroom stems and chop finely.
  2. Heat olive oil in a skillet. Sauté chopped stems, garlic, breadcrumbs, and parsley until fragrant.
  3. Mix in Parmesan cheese, salt, and pepper. Stuff mixture into mushroom caps.
  4. Bake for 20 minutes until golden.

Main Course: Herb-Crusted Prime Rib Roast

Ingredients:

  • 1 (5–6 lb) bone-in prime rib roast
  • 4 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper

Steps:

  1. Preheat oven to 450°F (230°C).
  2. Mix garlic, rosemary, thyme, olive oil, salt, and pepper. Rub generously over the roast.
  3. Place roast bone-side down on a rack in a roasting pan. Roast for 20 minutes.
  4. Lower heat to 325°F (165°C) and roast for another 1.5–2 hours (medium rare at 130°F internal temperature).
  5. Let rest for 20 minutes before slicing.

Side Dish 1: Creamy Scalloped Potatoes

Ingredients:

  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 2 cups heavy cream
  • 1 cup shredded Gruyere cheese
  • 1 cup shredded cheddar cheese
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Steps:

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. Layer potatoes in the dish, sprinkling each layer with garlic, salt, pepper, and cheeses.
  3. Pour cream over the top and sprinkle remaining cheese.
  4. Bake for 1 hour or until bubbly and golden.

Side Dish 2: Roasted Brussels Sprouts with Bacon

Ingredients:

  • 1 lb Brussels sprouts, halved
  • 4 slices bacon, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Steps:

  1. Preheat oven to 400°F (200°C). Toss Brussels sprouts with olive oil, bacon, salt, and pepper.
  2. Spread on a baking sheet and roast for 25–30 minutes, stirring halfway, until crispy.

Side Dish 3: Cranberry Sauce

Ingredients:

  • 12 oz fresh cranberries
  • 1 cup sugar
  • 1/2 cup orange juice
  • Zest of 1 orange

Steps:

  1. Combine all ingredients in a saucepan over medium heat.
  2. Cook for 10–15 minutes, stirring, until cranberries burst and sauce thickens. Let cool.

Dessert: Classic Christmas Pudding

Ingredients:

  • 1 cup breadcrumbs
  • 1 cup flour
  • 1 cup brown sugar
  • 1/2 cup suet or butter
  • 1 cup dried mixed fruit
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup brandy (optional)

Steps:

  1. Mix dry ingredients in a bowl. Stir in eggs, milk, and brandy.
  2. Grease a pudding mold, pour in mixture, and cover with foil.
  3. Steam in a large pot of simmering water for 3 hours, checking water level periodically.
  4. Cool slightly, unmold, and serve with custard or cream.
